Ingredients

  • 1 whole turkey, thawed
  • 2 tablespoons olive oil
  • 1/2 cup Dijon mustard
  • 1/4 cup maple syrup
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Grease a large roasting pan with olive oil.
  3. In a small bowl, whisk together the Dijon mustard, maple syrup, melted butter, salt, and pepper. Set aside.
  4. Remove the giblets and neck from the turkey cavity and discard.
  5. Rinse the turkey inside and out with cold water, then drain well.
  6. Pat dry with paper towels.
  7. Rub the turkey all over with the mustard mixture.
  8. Place the turkey in the prepared roasting pan.
  9. Tent loosely with aluminum foil.
  10. Bake for 2 1/2 to 3 hours, or until a meat thermometer inserted into the thickest part of the thigh registers 180 degrees F (80 degrees C).
  11. Discard any remaining mustard mixture.
  12. Let the turkey stand for 10 minutes before carving.
  13. Sprinkle with chopped fresh parsley before serving.

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine cream cheese, brie cheese, cranberries, green onions, parsley, salt, and pepper. Mix well.
  3. Loosen skin from turkey breast and legs.
  4. Spread the cheese mixture under the skin.
  5. Place turkey in a roasting pan.
  6. Bake for 3 to 4 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 180 degrees F (82 degrees C).
  7. Let the turkey rest for 10 minutes before carving.

  • I like to use my own homemade turkey stock in this recipe, but you can also use chicken stock if you prefer.
  • To make ahead, stuff the turkey and refrigerate it overnight. Bake the turkey the next day as directed.

  • 250ml chicken stock
  • Salt and pepper

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. If necessary, remove the pop-up timer from the turkey.
  3. Rinse turkey inside and out; pat dry with a paper towel.
  4. Loosen the skin over the breast and thighs; rub half of the apricot brandy mixture over the meat.
  5. Tuck wings behind the back.
  6. Tie drumsticks together.
  7. Place turkey, breast side up, on a rack in a shallow roasting pan.
  8. Bake uncovered for 4 hours or until a meat thermometer inserted into the thickest part of the thigh reads 180 degrees F (85 degrees C), basting every 30 minutes with the remaining apricot brandy mixture.
  9. Remove the turkey from the oven; tent it with foil.
  10. Let stand for 15 to 20 minutes before carving.
  11. To make the gravy:
    • Pour off all but 3 tablespoons of the fat from the roasting pan.
    • Place pan on top of stove over two burners set on medium heat.
    • Add chicken stock, orange juice, brown sugar, Dijon mustard, honey, and thyme leaves; whisk until well blended and bubbly.
    • Season to taste with salt and pepper.
    • Pour into a gravy boat or serving dish.
  12. Serve with the carved turkey.
